Description

This Lime Jello Salad is a retro dessert classic that’s light, creamy, and refreshingly sweet! Made with just 5 ingredients, including lime Jello, cream cheese, pineapple, Cool Whip, and 7UP, this no-bake treat is easy to make and perfect for potlucks, holidays, and summer gatherings.

  • 1 (6 oz) package lime Jello (or two 3 oz packages)
  • 2 cups boiling water
  • 1 (8 oz) package cream cheese, softened
  • 2 cups chilled 7UP
  • 1 (8 oz) can crushed pineapple, drained
  • 1 (12 oz) container Cool Whip, thawed

Instructions

  • Dissolve the Jello – Bring 2 cups of water to a boil, then stir in the lime Jello until fully dissolved. Remove from heat.
  • Blend the Cream Cheese – In a separate bowl, beat the cream cheese until smooth.
  • Combine Jello & Cream Cheese – Add the Jello mixture to the cream cheese in 3 small batches, mixing with a hand mixer each time to prevent lumps.
  • Mix in 7UP – Gently stir in the chilled 7UP by hand.
  • Chill Until Slightly Thickened – Refrigerate for 30-60 minutes, checking every 15 minutes, until the mixture has a thick but soupy consistency (like egg whites).
  • Fold in Cool Whip & Pineapple – Once the Jello mixture is thickened, stir in Cool Whip and drained pineapple until evenly combined.
  • Pour & Set – Transfer the mixture into a 9×13 serving dish or Jello mold and chill until fully set (about 5 hours or overnight).
  • Serve & Enjoy!

Notes

  • For a firmer set, let the Jello chill longer before adding Cool Whip.
  • For extra crunch, add chopped pecans or walnuts before chilling.
