Description

Ingredients

  • 2 cups crispy rice cereal
  • 1 cup milk chocolate chips
  • 1/2 cup peanut butter (smooth or crunchy)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  • Prepare the Pan:
    • Line an 8-inch square baking pan with parchment paper, leaving extra paper hanging over the edges for easy removal.
  • Mix the Dry Ingredients:
    • In a large mixing bowl, combine the crispy rice cereal and a pinch of salt.
  • Melt the Wet Ingredients:
    • In a microwave-safe bowl or double boiler, melt the chocolate chips, peanut butter, and honey (or maple syrup) together. Stir every 30 seconds in the microwave or continuously over low heat until smooth.
  • Add Vanilla:
    • Once the mixture is melted, stir in the vanilla extract.
  • Combine:
    • Pour the chocolate mixture over the crispy rice cereal and gently mix until all the cereal is evenly coated.
  • Press into Pan:
    • Transfer the mixture to the prepared pan and press down firmly with a spatula to make the bars compact.
  • Chill:
    • Refrigerate for at least 1 hour, or until fully set.
  • Cut and Serve:
    • Use the parchment paper overhang to lift the set bars out of the pan. Cut into squares and serve.

Notes

  • For added crunch, mix in chopped nuts or mini marshmallows.
  • Use dark chocolate chips for a richer flavor.
  • These bars are perfect for meal prep and can be stored in an airtight container in the fridge for up to 1 week or frozen for up to 1 month.
