Ingredients

Scale
  • 1 1/2 cups Lotus Biscoff cookies, crushed
  • 1/2 cup Biscoff spread (cookie butter)
  • 4 oz cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups milk or dark chocolate, melted
  • 2 tablespoons crushed Biscoff cookies (for garnish)

Instructions

1. Make the Dough:

  1. In a bowl, mix crushed Biscoff cookies, cream cheese, vanilla extract, and Biscoff spread.
  2. Stir until well combined and a smooth dough forms.

2. Shape the Truffles:

  1. Roll the mixture into small balls (about 1 inch in diameter).
  2. Place them on a lined baking sheet and freeze for 20 minutes.

3. Coat with Chocolate:

  1. Dip each truffle in melted chocolate, ensuring a smooth, even coating.
  2. Place them back on the baking sheet and sprinkle crushed Biscoff cookies on top.

4. Chill & Serve:

  1. Refrigerate for 10-15 minutes until the chocolate sets.
  2. Enjoy your no-bake Biscoff truffles with coffee or tea!

  • Use dark chocolate for a less sweet, more intense flavor.
