Ingredients

For the chicken:

  • 4 boneless chicken thighs or breasts

  • Vegetable oil, for frying

For the hot glaze:

  • 1/2 cup frying oil (from the chicken)

  • 2 tablespoons cayenne pepper

  • 1 tablespoon brown sugar

  • 1/2 teaspoon paprika

  • 1/2 teaspoon garlic powder

For assembly:

  • 4 brioche buns, toasted

  • Dill pickle slices

  • Coleslaw (optional)

  • Spicy mayo or comeback sauce


Instructions

  1. In a bowl, marinate the chicken with buttermilk and hot sauce for at least 1 hour (overnight for deeper flavor).

  2. In a separate bowl, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.

  3. Dredge the marinated chicken in the flour mix, pressing to coat thoroughly.

  4. Heat oil in a deep skillet or fryer to 350°F (175°C). Fry chicken until golden and crispy, about 6–8 minutes per side.

  5. For the glaze, mix 1/2 cup of the hot frying oil with cayenne pepper, brown sugar, paprika, and garlic powder.

  6. Brush or dip the hot chicken pieces in the glaze.

  7. Assemble the sandwich: spread spicy mayo on the bottom bun, layer with glazed chicken, top with pickles and coleslaw, then cover with the top bun.
