Ingredients

For the Chicken:

  • 2 bone-in chicken breasts (or substitute with thighs)

  • Salt and pepper, to taste

  • 1 tbsp olive oil

For the Maple Mustard Glaze:

  • 1/4 cup pure maple syrup

  • 2 tbsp Dijon mustard

  • 1 tbsp whole grain mustard

  • 1 tbsp soy sauce

  • 1 garlic clove, minced

  • 1 tsp apple cider vinegar

  • 1/2 tsp smoked paprika (optional)

For the Waffles:

  • 1 1/2 cups all-purpose flour

  • 2 tbsp sugar

  • 1 tbsp baking powder

  • 1/4 tsp salt

  • 1 1/4 cups milk

  • 2 large eggs

  • 1/3 cup melted butter

  • 1 tsp vanilla extract


Instructions

Prepare the Maple Mustard Glaze:

  1. In a saucepan over low heat, whisk together maple syrup, Dijon and whole grain mustard, soy sauce, garlic, vinegar, and paprika.

  2. Simmer for 4–5 minutes until slightly thickened. Set aside.

Cook the Chicken:

  1. Preheat oven to 400°F (200°C).

  2. Season chicken with salt and pepper. Heat olive oil in a skillet and sear chicken skin-side down for 3–4 minutes until golden.

  3. Flip and sear the other side for 2 more minutes.

  4. Transfer to a baking dish, brush with glaze, and roast for 25–30 minutes until cooked through.

  5. Brush again with glaze before serving.

Make the Waffles:

  1. In one bowl, whisk together flour, sugar, baking powder, and salt.

  2. In another, whisk milk, eggs, melted butter, and vanilla extract.

  3. Combine wet and dry ingredients until just mixed.

  4. Cook in a preheated waffle iron until golden and crisp.

Serve:

  • Place each glazed chicken portion over a freshly made waffle.

  • Drizzle with more glaze and serve immediately for the best sweet-and-savory flavor.

  • Use boneless chicken for easier serving or shredding.
