For the Crust & Crumb Topping:
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
For the Mulberry Filling:
- 3 cups fresh mulberries (or frozen, thawed)
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest (optional)
Instructions
- Preheat the Oven: Set oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- Make the Crust & Crumb Topping: In a bowl, mix flour, melted butter, sugar, salt, and vanilla until crumbly. Press half of the mixture into the pan to form the crust.
- Prepare the Mulberry Filling: In another bowl, mix mulberries, sugar, cornstarch, lemon juice, and zest until combined.
- Assemble: Spread the mulberry mixture evenly over the crust. Sprinkle the remaining crumb mixture on top.
- Bake: Place in the oven and bake for 40-45 minutes, or until golden brown and bubbly.
- Cool & Serve: Let cool before slicing into bars. Serve warm or chilled.
Notes
- Substitute blackberries or blueberries if mulberries are unavailable.
- For extra crunch, add ½ cup chopped nuts to the crumb topping.
