  • 2 1/2 cups all-purpose flour

  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

For the Mulberry Filling:

  • 3 cups fresh mulberries (or frozen, thawed)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest (optional)

Instructions

  • Preheat the Oven: Set oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  • Make the Crust & Crumb Topping: In a bowl, mix flour, melted butter, sugar, salt, and vanilla until crumbly. Press half of the mixture into the pan to form the crust.
  • Prepare the Mulberry Filling: In another bowl, mix mulberries, sugar, cornstarch, lemon juice, and zest until combined.
  • Assemble: Spread the mulberry mixture evenly over the crust. Sprinkle the remaining crumb mixture on top.
  • Bake: Place in the oven and bake for 40-45 minutes, or until golden brown and bubbly.
  • Cool & Serve: Let cool before slicing into bars. Serve warm or chilled.

Notes

  • Substitute blackberries or blueberries if mulberries are unavailable.
  • For extra crunch, add ½ cup chopped nuts to the crumb topping.
