- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp black pepper

- 1 tbsp chopped fresh parsley (for garnish)
Instructions
- coriander, smoked paprika, turmeric, cinnamon, salt, black pepper, and cayenne pepper (if using).
- Marinate the chicken: Coat the chicken breasts or thighs in the marinade, ensuring even coverage. Let it marinate for at least 30 minutes (or overnight for deeper flavor).
- Preheat the grill: Heat a grill or grill pan to medium-high heat.
- Grill the chicken: Cook for 5-7 minutes per side, or until the chicken is fully cooked and slightly charred.
- Rest & serve: Remove from heat, let the chicken rest for a few minutes, then slice.
- Garnish & enjoy: Serve on a bed of fresh greens with cherry tomatoes and sliced onions, and garnish with chopped parsley.
Notes
- Swap chicken for tofu or chickpeas for a vegetarian version.
- Serve with quinoa, couscous, or roasted vegetables for a complete meal.
- For extra juiciness, use chicken thighs instead of breasts.
