Ingredients:

  • 500g shrimp (peeled & deveined)
  • 3 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 large tomato (grated)
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • 1/2 tsp harissa (optional, for a spicy kick)
  • 1/2 cup fresh coriander & parsley (chopped)
  • Juice of 1/2 lemon

Instructions

1️⃣ Heat olive oil in a traditional tagine or a deep skillet over medium heat.
2️⃣ Add minced garlic and sauté for 1–2 minutes until fragrant.
3️⃣ Stir in the grated tomato, tomato paste, paprika, cumin, turmeric, black pepper, salt, cayenne, and harissa (if using). Cook for 5 minutes until the sauce thickens.
4️⃣ Add the shrimp, coating them well in the sauce. Cook for 5–7 minutes or until they turn pink and opaque.
5️⃣ Stir in fresh coriander & parsley and drizzle with lemon juice for a burst of freshness.
6️⃣ Serve hot with warm crusty bread or steamed couscous.

Notes

  • For a richer sauce, add ½ cup of seafood stock or water while cooking.
  • Adjust the spice level by increasing or reducing harissa and cayenne pepper.
  • For an extra depth of flavor, let the sauce simmer for a few extra minutes before adding the shrimp.
