Description

Moroccan Seffa is a unique sweet and savory dish, traditionally enjoyed during Ramadan and Eid celebrations. Made with steamed couscous or vermicelli, then topped with toasted almonds, powdered sugar, cinnamon, and raisins, this dish is light, fragrant, and slightly sweet. Often served as a dessert or alongside savory meats, it’s a true Moroccan delicacy that brings warmth and comfort to any table.

1️⃣ Prepare the Couscous or Vermicelli:

  • If using couscous:

    • Place in a large bowl and lightly sprinkle with water, then fluff with a fork.
    • Steam in a couscoussier (steamer) for 15 minutes.
    • Remove, fluff again, drizzle with vegetable oil, and steam one more time until tender.
  • If using vermicelli:

    • Toss with a little vegetable oil to prevent sticking.
    • Steam in a steamer or colander over boiling water until soft, stirring occasionally.

2️⃣ Add Flavor:

  • Once fully cooked, transfer to a large bowl.
  • Mix in butter, salt, and the cinnamon stick, then fluff until light and airy.

3️⃣ Assemble the Dish:

  • Transfer the steamed couscous or vermicelli to a serving plate, forming a mound or dome shape.

4️⃣ Garnish & Serve:

  • Sprinkle generously with powdered sugar, ground cinnamon, and toasted almonds.
  • Optionally, top with soaked raisins and a drizzle of orange blossom water for extra fragrance.
  • Serve warm, either as a dessert or alongside a savory meat dish.

Notes

  • For a richer version, replace butter with ghee or clarified butter.
  • For extra crunch, add chopped walnuts or pistachios to the topping.
