This one-pan Mongolian beef noodles recipe is a quick and flavorful dinner perfect for busy weeknights. Made with ground beef, stir-fried veggies, and tender noodles tossed in a rich, sweet-savory Mongolian sauce, this easy meal is ready in just 30 minutes!

Ingredients

Units Scale
  • 8 oz noodles (lo mein, spaghetti, or rice noodles)
  • 1 lb ground beef
  • 1 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 small onion, sliced
  • 1 bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup soy sauce
  • 1/4 cup hoisin sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch (mixed with 2 tbsp water)
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup beef broth or water
  • 2 green onions, chopped
  • 1 tsp sesame seeds (for garnish)

Instructions

  1. Cook the Noodles: Boil the noodles according to package instructions. Drain and set aside.
  2. Brown the Beef: Heat vegetable oil in a large pan or wok over medium-high heat. Add ground beef and cook until browned. Drain excess grease if needed.
  3. Sauté Aromatics & Veggies: Add garlic, ginger, and onions to the beef. Sauté for 1-2 minutes until fragrant. Toss in bell pepper and shredded carrots, cooking until slightly tender.
  4. Prepare the Sauce: In a small bowl, whisk together soy sauce, hoisin sauce, brown sugar, red pepper flakes (if using), and beef broth. Stir in cornstarch slurry to thicken.
  5. Combine Everything: Pour the sauce into the pan with the beef and veggies. Stir well, then add the cooked noodles, tossing everything together until fully coated.
  6. Garnish & Serve: Sprinkle with green onions and sesame seeds before serving. Enjoy!

Notes

  • Swap ground beef for chicken, turkey, or tofu for a variation.
  • Use low-sodium soy sauce to control saltiness.
  • Add broccoli, snap peas, or mushrooms for extra veggies.
