Instructions
- Prepare the Filling: In a bowl, mix mashed potatoes, diced bell peppers, turmeric, and chili powder. Set aside.
- Cook the Mini Dosas: Heat a non-stick pan over medium heat. Pour small circles of dosa batter onto the pan (about 3 inches in diameter).
- Add the Filling: Once the dosas turn golden brown and crispy, place a small spoonful of the potato mixture in the center.
- Roll & Secure: Carefully roll each dosa into a small tube and secure it with a toothpick.
- Serve & Garnish: Arrange on a serving platter, garnish with fresh cilantro, and serve with a dipping sauce like coconut chutney or spicy tomato chutney.
