Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup butter, softened
- 1/2 cup finely ground pistachios
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Whole pistachios (for garnish)
Instructions
-
Preheat the Oven:
- Set your oven to 300°F (150°C) and line a baking sheet with parchment paper.
-
Make the Dough:
- In a large bowl, beat the butter and powdered sugar together until light and creamy.
- Add the vanilla extract, ground pistachios, flour, and salt.
- Mix until a smooth dough forms. If the dough feels dry, knead it gently with your hands.
-
Shape the Cookies:
- Roll the dough into small balls (about 1 inch in diameter).
- Place them on the baking sheet, leaving space between each.
- Press a whole pistachio into the center of each cookie.
-
Bake:
- Bake for 12-15 minutes or until the cookies are set but not browned.
- Ghraibeh should remain pale for its signature melt-in-your-mouth texture.
-
Cool & Serve:
- Let the cookies cool completely on the baking sheet before transferring them to a plate.
- Serve with Arabic coffee or tea for an authentic experience!
Notes
- Do not overbake—the cookies should remain pale for the best texture.
- Store in an airtight container at room temperature for up to one week.
- For extra richness, substitute ghee for butter.
- You can use almond flour instead of ground pistachios for a different flavor variation.
