Description

Pistachio Ghraibeh is a luxurious twist on the classic Middle Eastern shortbread cookie. These delicate, melt-in-your-mouth cookies are made with buttery dough, finely ground pistachios, and a touch of vanilla, creating a rich, nutty flavor. Each cookie is adorned with a whole pistachio, adding an elegant touch to this simple yet indulgent treat. Perfect for Ramadan, Eid, or as an everyday delight with Arabic coffee or tea!

Ingredients

Units Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup butter, softened
  • 1/2 cup finely ground pistachios
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Whole pistachios (for garnish)

Instructions

  1. Preheat the Oven:

    • Set your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Make the Dough:

    • In a large bowl, beat the butter and powdered sugar together until light and creamy.
    • Add the vanilla extract, ground pistachios, flour, and salt.
    • Mix until a smooth dough forms. If the dough feels dry, knead it gently with your hands.
  3. Shape the Cookies:

    • Roll the dough into small balls (about 1 inch in diameter).
    • Place them on the baking sheet, leaving space between each.
    • Press a whole pistachio into the center of each cookie.
  4. Bake:

    • Bake for 12-15 minutes or until the cookies are set but not browned.
    • Ghraibeh should remain pale for its signature melt-in-your-mouth texture.
  5. Cool & Serve:

    • Let the cookies cool completely on the baking sheet before transferring them to a plate.
    • Serve with Arabic coffee or tea for an authentic experience!

Notes

  • Do not overbake—the cookies should remain pale for the best texture.
  • Store in an airtight container at room temperature for up to one week.
  • For extra richness, substitute ghee for butter.
  • You can use almond flour instead of ground pistachios for a different flavor variation.
