Ingredients

Instructions

  1. Grill Sausages: Cook sausages over medium heat until browned and fully cooked. Set aside.

  2. Scramble Eggs: Whisk and scramble eggs in a skillet with oil or butter. Season with salt and pepper.

  3. Sauté Peppers: In a hot pan, sauté green chiles and red peppers for 4–5 minutes until blistered and tender. Season with salt and smoked paprika if using.

  4. Warm Flatbread: Lightly grill or heat flatbreads until just golden and flexible.

  5. Assemble Dogs: Place a sausage in the center of each flatbread. Top with scrambled eggs, sautéed peppers, and fresh salsa. Sprinkle with cilantro.

  6. Serve: Fold and serve warm, optionally with lime wedges or hot sauce.

Notes
