Description

Refreshing, zesty, and full of Mexican coastal flavor, this Mexican crab cocktail is the ultimate chilled seafood dish. Made with imitation crab, fresh vegetables, and a vibrant tomato-lime sauce, it’s perfect as a seafood appetizer or light summer meal. Enjoy it ceviche-style with tortilla chips or saltines—easy, delicious, and full of Latin flair.


Ingredients

  • 1 lb imitation crab meat, shredded or chopped

  • 1 large tomato, diced

  • 1 cucumber, peeled and diced

  • 1/4 cup red onion, finely chopped

  • 1/2 cup fresh cilantro, chopped

  • 1 cup tomato juice or Clamato

  • 2 tbsp ketchup

  • Juice of 2 limes

  • 1 tsp hot sauce (optional)

  • Salt and pepper, to taste


Instructions

  1. In a large bowl, combine crab meat, diced tomato, cucumber, onion, and chopped cilantro.

  2. In a separate bowl, whisk together tomato juice, ketchup, lime juice, hot sauce (if using), salt, and pepper.

  3. Pour the sauce over the crab mixture and gently toss to coat evenly.

  4. Cover and refrigerate for at least 30 minutes to let the flavors meld.

  5. Serve chilled with tortilla chips, avocado slices, or saltine crackers.

  • For more authentic flavor, substitute real crab or mix with shrimp.
