For the Filling:
-
3 (8 oz) packages cream cheese, softened

3/4 cup sugar

3 large eggs

1 tsp vanilla extract
-
1/2 cup sour cream
-
Blue, turquoise, and purple gel food coloring
-
-
For the Topping:
-
Whipped cream
-
Edible mermaid tail topper (fondant or molded chocolate)
-
Instructions
-
Preheat the oven to 325°F (160°C). Line the bottom of a springform pan with parchment paper.
-
In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of the pan to form an even crust. Bake for 8–10 minutes and then cool slightly.
-
In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing just until combined. Add the vanilla extract and sour cream, and mix until the batter is smooth.
-
Divide the batter evenly into three bowls. Use gel food coloring to color each bowl a different shade: blue, turquoise, and purple.
-
Drop spoonfuls of each colored batter randomly onto the crust. Use a skewer or toothpick to gently swirl the colors together, creating a marbled effect.
-
Bake the cheesecake for 45–50 minutes, or until the center is set but still slightly jiggly. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
-
Before serving, top the cheesecake with whipped cream and an edible mermaid tail topper for a magical, ocean-inspired finish.
Notes
-
Ensure the cheesecake is fully chilled before slicing for the best texture and presentation.
-
For a more intense marbled effect, gently swirl the batter more, but be careful not to overmix.
-
The edible mermaid tail topper can be made from fondant or molded chocolate for a fun and whimsical touch.
