For the Macaron Shells:
- 1 cup almond flour
- 1 3/4 cup powdered sugar
- 3 large egg whites (room temperature)
- 1/4 cup granulated sugar
- 1/2 tsp vanilla extract
- Purple, green, and gold gel food coloring
For the Filling:
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
- 1–2 tbsp heavy cream
- Purple, green, and gold food coloring
Instructions
- Sift almond flour and powdered sugar together to remove lumps.
- In a separate bowl, beat egg whites until foamy. Gradually add granulated sugar and beat until stiff peaks form.
- Fold in the dry mixture gently, making sure not to overmix.
- Divide the batter into three portions and color each purple, green, or leave one plain (gold).
- Pipe 1-inch circles onto a parchment-lined baking sheet. Let sit for 30-45 minutes until a skin forms on the surface.
- Bake at 300°F (150°C) for 12-15 minutes. Let cool completely before filling.
Prepare Filling:
- Beat butter until creamy, then mix in powdered sugar, vanilla, and heavy cream until smooth.
- Divide into three portions and color each purple, green, and gold.
Assemble Macarons:
- Pipe one color of filling between two macaron shells and sandwich together.
- Decorate with edible glitter or hand-paint gold accents if desired.
Notes
- Letting the macarons rest before baking helps create the signature smooth top and ruffled “feet.”
- Store in an airtight container in the fridge for up to 3 days. Bring to room temperature before serving.
- For extra festive flair, dust macarons with gold luster dust or drizzle with white chocolate.
