Description
This Magic Lemon Cobbler is a bright, buttery dessert layered with a soft, pudding-like lemon center and a golden, crisp topping. Made with pantry staples and canned lemon pie filling, it’s the ultimate easy cobbler recipe for spring, Easter, or anytime you crave a sweet-meets-tangy comfort bake.
Ingredients

1/2 cup (1 stick) unsalted butter
 - 
1 cup all-purpose flour
 - 
1 1/2 tsp baking powder
 - 
1/4 tsp salt
 - 
1 cup granulated sugar
 - 
1 cup buttermilk (or 1 tbsp lemon juice + milk to make 1 cup)
 - 
1 tsp vanilla extract
 - 
1 tsp lemon extract (optional, for extra citrus flavor)
 - 
1 can (21 oz) lemon pie filling or lemon curd
 
Instructions
- 
Preheat Oven & Melt Butter:
Preheat oven to 350°F (175°C). Place butter in a 9×9-inch baking dish and melt in the oven (about 3–4 minutes). Remove when fully melted. - 
Make the Batter:
In a mixing bowl, whisk flour, baking powder, salt, and sugar.
Stir in buttermilk, vanilla, and lemon extract (if using) until smooth. - 
Assemble the Cobbler:
Pour batter evenly over the melted butter—do not stir.
Spoon lemon pie filling over the top. It will sink and bake into the batter for a “magic” layered effect. - 
Bake:
Bake for 45–55 minutes, or until golden brown and mostly set in the center.
A toothpick should come out with moist crumbs. - 
Cool & Serve:
Let rest 10–15 minutes before serving.
Optional: Dust with powdered sugar and serve warm with whipped cream or vanilla ice cream. 
Notes

For a stronger lemon flavor, use lemon curd and include lemon extract.
