- 12 oz elbow macaroni
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 1 cup heavy cream
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 3 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 tbsp melted butter
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook macaroni according to package instructions; drain and set aside.
- In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to form a roux.
- Gradually whisk in milk and cream, stirring constantly until thickened.
- Stir in mustard, salt, pepper, paprika, and cheeses (reserving some for topping). Mix until smooth.
- Add cooked pasta and stir to coat. Transfer to the prepared baking dish.
- In a small bowl, combine breadcrumbs with melted butter. Sprinkle over macaroni and cheese.
- Bake for 20-25 minutes until bubbly and golden brown. Serve warm.
Notes
- Want it extra creamy? Add an extra 1/2 cup of heavy cream.
- For a smokier flavor, use smoked cheddar or add a dash of smoked paprika.
- Prefer a crispier topping? Broil for the last 2-3 minutes until golden brown.
