- 1 (14 oz) can sweetened condensed milk
- 1/2 cup fresh lemon juice (about 3 lemons)
- 2 tsp lemon zest
- 2 egg yolks
For the Topping:
- 6 oz fresh blueberries
Instructions
Step 1: Prepare the Crust
- Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Press the mixture firmly into the bottom of the pan.
- Bake for 8-10 minutes, then let cool slightly.
Step 2: Make the Lemon Filling
- In a bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolks until smooth.
Step 3: Assemble & Bake
- Pour the lemon mixture over the cooled crust and spread evenly.
- Sprinkle fresh blueberries over the top.
- Bake for 15-18 minutes, or until the edges are set but the center is slightly jiggly.
Step 4: Cool & Serve
- Let the bars cool to room temperature, then refrigerate for at least 2 hours to set.
- Slice into squares and enjoy!
