Description

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 6 tbsp salted butter (melted)
  • 1 tbsp granulated sugar

For the Filling:

  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup fresh lemon juice (about 3 lemons)
  • 2 tsp lemon zest
  • 2 egg yolks

For the Topping:

  • 6 oz fresh blueberries

Instructions

Step 1: Prepare the Crust

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  3. Press the mixture firmly into the bottom of the pan.
  4. Bake for 8-10 minutes, then let cool slightly.

Step 2: Make the Lemon Filling

  1. In a bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolks until smooth.

Step 3: Assemble & Bake

  1. Pour the lemon mixture over the cooled crust and spread evenly.
  2. Sprinkle fresh blueberries over the top.
  3. Bake for 15-18 minutes, or until the edges are set but the center is slightly jiggly.

Step 4: Cool & Serve

  1. Let the bars cool to room temperature, then refrigerate for at least 2 hours to set.
  2. Slice into squares and enjoy!

  • For a firmer crust, press the graham cracker mixture firmly before baking.
