  • 2 cups fresh spinach, chopped (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Sauce:

  • 1 jar (24 oz) marinara sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes (optional)

For Assembly:

  • 12 lasagna noodles, cooked and drained
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons fresh parsley or basil, chopped

Instructions

  1. Prepare the Filling:

    • In a bowl, mix cottage cheese, egg, Parmesan cheese, Italian seasoning, spinach (if using), salt, and black pepper until well combined.
  2. Assemble the Roll-Ups:

    • Lay cooked lasagna noodles flat on a clean surface.
    • Spread a generous layer of the cottage cheese mixture evenly over each noodle.
    • Carefully roll up each noodle and place them seam-side down in a greased baking dish.
  3. Add the Sauce:

    • In a saucepan, heat marinara sauce with garlic powder and red pepper flakes for extra flavor.
    • Pour over the rolled-up noodles.
  4. Bake the Roll-Ups:

    • Preheat oven to 375°F (190°C).
    • Sprinkle mozzarella cheese on top, cover with foil, and bake for 25 minutes.
    • Remove foil and bake another 10 minutes until cheese is melted and bubbly.
  5. Serve:

    • Garnish with fresh parsley or basil.
