Description
These Korean Coffee Buns are soft, fluffy brioche buns topped with a buttery coffee crust that bakes into a delicate, aromatic layer. Just like the ones from Paris Baguette and other Korean bakeries, they’re perfect with a cup of coffee or milk, making them an ideal breakfast or tea-time treat!

For the Dough
- 340g brioche flour
- 105g all-purpose flour
- 7g instant yeast
- 70g egg (about 1 large egg)
- 180ml milk, warmed
- 3g salt
- 75g unsalted butter, softened
- 75g caster sugar
For the Coffee Topping
- 65g unsalted butter, softened
- 40g caster sugar
- 9g instant coffee powder (dissolved in 15ml hot water)
- 30g all-purpose flour
Instructions
1️⃣ Make the Dough
- In a large bowl, mix brioche flour, all-purpose flour, yeast, salt, and sugar.
- Add the egg and warm milk, then knead until a rough dough forms.
- Gradually add softened butter, kneading until the dough is smooth and elastic (about 10 minutes).
- Cover and let rise for 1.5–2 hours, until doubled in size.
2️⃣ Prepare the Coffee Topping
- Dissolve instant coffee powder in hot water and let cool slightly.
- In a separate bowl, beat butter and sugar until fluffy.
- Mix in the coffee liquid, then add flour, stirring until smooth.
- Transfer to a piping bag and refrigerate until ready to use.
3️⃣ Shape & Second Rise
- Once the dough has risen, punch it down and divide into 10 equal pieces.
- Shape each piece into a smooth ball and place on a baking sheet lined with parchment paper.
- Cover and let rise for another 45 minutes.
4️⃣ Pipe & Bake
- Preheat oven to 180°C (350°F).
- Pipe the coffee topping in a spiral pattern on top of each bun.
- Bake for 15–18 minutes, or until golden brown and the topping is crispy.
5️⃣ Serve & Enjoy!
- Let cool slightly before serving.
- Best enjoyed warm with a cup of coffee or milk!
Notes
- For extra richness, fill the buns with custard or sweetened cream cheese before baking.
- Store in an airtight container for up to 2 days, or reheat in the oven for a fresh taste.
- For a stronger coffee flavor, increase the instant coffee to 12g.
