For the Meatloaf:

  • 1 1/2 lbs (700g) ground beef (or a mix of beef & pork)
  • 1/2 cup (50g) breadcrumbs (panko or regular)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/2 cup (120ml) milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme

For the Meatloaf Glaze:

  • 1/2 cup (120ml) ketchup
  • 1 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce

For the Mashed Potatoes:

  • 2 lbs (900g) russet or Yukon Gold potatoes, peeled and chopped
  • 1/2 cup (120ml) heavy cream (or milk)
  • 1/4 cup (60g) unsalted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • Fresh chopped parsley (for garnish)

Instructions

1. Prepare the Meatloaf:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
  2. In a large bowl, mix together ground beef, breadcrumbs, onion, garlic, egg, milk, Worcestershire sauce, salt, pepper, paprika, and thyme until well combined.
  3. Shape into a loaf on the prepared baking sheet or press into a loaf pan.

2. Make the Glaze:

  1. In a small bowl, mix ketchup, brown sugar, Dijon mustard, and Worcestershire sauce.
  2. Spread half of the glaze over the meatloaf before baking.

3. Bake the Meatloaf:

  1. Bake for 40 minutes, then spread the remaining glaze over the top.
  2. Continue baking for another 15-20 minutes, or until the internal temperature reaches 160°F (70°C).
  3. Let rest for 10 minutes before slicing.

4. Prepare the Mashed Potatoes:

  1. While the meatloaf bakes, boil potatoes in salted water for 15-20 minutes, until fork-tender.
  2. Drain and mash with butter, cream, salt, pepper, and garlic powder until smooth and creamy.

5. Serve & Enjoy:

  • Slice the meatloaf and serve with a generous scoop of mashed potatoes.
  • Garnish with fresh parsley and enjoy this classic, comforting meal!

  • Want extra moisture? Add ¼ cup shredded cheese or grated zucchini to the meatloaf.
