Description

Crispy on the outside, juicy and flavorful on the inside—this beer can chicken is a backyard BBQ classic, perfect for Father’s Day!


Ingredients

Scale
  • 1 whole chicken (45 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can of beer (12 oz)
  • 2 cloves garlic, smashed

 

  • 1 sprig rosemary (optional)

Instructions

  • Preheat your grill to medium-high heat (375°F / 190°C) using indirect heat.
  • Pat the chicken dry and rub with olive oil.
  • In a bowl, mix salt, black pepper, smoked paprika, garlic powder, onion powder, dried thyme, and cayenne pepper. Generously season the chicken inside and out.
  • Open the beer can, pour out (or drink) about ¼ of it, and add the smashed garlic and rosemary to the can.
  • Place the chicken cavity over the beer can so it sits upright.
  • Carefully place the chicken on the grill, balancing it on the beer can. Close the lid and cook for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part.
  • Carefully remove the chicken from the grill and let it rest for 10 minutes before slicing.

 

  • Serve with grilled veggies and your favorite BBQ sides.

Notes

  • For extra crispy skin, pat the chicken dry and let it rest uncovered in the fridge for an hour before grilling.
  • If using an oven, roast the chicken at 375°F (190°C) for about 1 hour 30 minutes using a sturdy roasting pan.
