Description

Ingredients

  • 8 lamb chops (French cut if possible)

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 eggs

  • 1 tablespoon Dijon mustard

  • 1 cup Italian-style breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • 1 tablespoon fresh parsley, chopped

 

  • Olive oil, for frying


Instructions

  1. Pat lamb chops dry and season both sides with salt and pepper.

  2. In a shallow bowl, whisk eggs with Dijon mustard.

  3. In a separate bowl, combine breadcrumbs, Parmesan, garlic powder, oregano, and parsley.

  4. Dip each lamb chop in the egg mixture, then dredge in breadcrumb mixture to coat thoroughly.

  5. Heat about 1/4 inch of olive oil in a large skillet over medium heat.

  6. Fry lamb chops for 3–4 minutes per side, or until golden and internal temperature reaches 135°F for medium-rare.

  7. Remove and place on paper towel-lined plate. Let rest for 5 minutes before serving.

Notes

  • Serve with arugula salad, roasted vegetables, or creamy mashed potatoes.

  • For extra crispiness, press coating firmly onto the meat before frying.
