Description

Flaky, golden puff pastry wrapped around a savory Irish sausage filling, baked to perfection. These crispy and flavorful sausage rolls make a delicious St. Patrick’s Day snack, appetizer, or party food!


Ingredients

  • 1 lb Irish sausage (or regular pork sausage, casings removed)
  • 1/2 cup breadcrumbs
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Dijon mustard
  • 1 egg, beaten (for filling)
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat & Prep:

    • Preheat oven to 400°F (200°C).
    • Line a baking sheet with parchment paper.
  2. Prepare the Sausage Filling:

    • In a bowl, mix together the sausage, breadcrumbs, thyme, sage, salt, pepper, Dijon mustard, and 1 beaten egg until well combined.
  3. Assemble the Rolls:

    • Roll out the puff pastry and cut it into two long strips.
    • Divide the sausage mixture and shape it into logs along the center of each pastry strip.
  4. Roll & Seal:

    • Fold the puff pastry over the sausage, pressing to seal the edges with a little egg wash.
    • Slice into smaller rolls and place them on the prepared baking sheet.
  5. Bake:

    • Brush the tops with the remaining egg wash.
    • Bake for 20-25 minutes, or until golden brown and crispy.
  6. Serve & Enjoy:

    • Serve warm with Dijon mustard, honey mustard, or your favorite dipping sauce.
