- 1 lb Irish sausage (or regular pork sausage, casings removed)
- 1/2 cup breadcrumbs
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Dijon mustard
- 1 egg, beaten (for filling)
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions

Preheat & Prep:
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper.

Prepare the Sausage Filling:
- In a bowl, mix together the sausage, breadcrumbs, thyme, sage, salt, pepper, Dijon mustard, and 1 beaten egg until well combined.

Assemble the Rolls:
- Roll out the puff pastry and cut it into two long strips.
- Divide the sausage mixture and shape it into logs along the center of each pastry strip.

Roll & Seal:
- Fold the puff pastry over the sausage, pressing to seal the edges with a little egg wash.
- Slice into smaller rolls and place them on the prepared baking sheet.

- Brush the tops with the remaining egg wash.
- Bake for 20-25 minutes, or until golden brown and crispy.
