Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 tsp lemon zest
  • 1 tsp salt

 

  • 1/2 tsp black pepper

Instructions

  • Prepare the Butter – In a bowl, mix softened butter with parsley, rosemary, thyme, garlic, lemon zest, salt, and black pepper until well combined.
  • Prep the Turkey – Pat the turkey dry with paper towels.
  • Loosen the Skin – Gently slide your fingers under the turkey skin to separate it from the meat.
  • Butter Under the Skin – Spread a generous amount of the compound butter under the skin, ensuring it reaches as much of the meat as possible.
  • Coat the Exterior – Rub the remaining butter all over the outside of the turkey for a crispy, golden finish.

 

  • Roast & Baste – Roast the turkey according to your recipe, basting occasionally for extra moisture and flavor.

  • Make Ahead – Prepare and refrigerate the butter up to 3 days in advance, or freeze for up to 3 months.
