- 10 organic lemons (preferably unwaxed)
- 2 1/2 cups (600 ml) high-proof vodka or grain alcohol
- 2 1/2 cups (600 ml) water
- 2 1/4 cups (450 g) granulated sugar
Instructions
1. Prepare the Lemons:
- Wash and dry the lemons thoroughly.
- Using a vegetable peeler, remove the lemon zest, avoiding the bitter white pith.
2. Infuse the Vodka:
- Place the lemon peels in a large glass jar.
- Pour in the vodka, ensuring the peels are fully submerged.
- Seal tightly and let it infuse in a cool, dark place for at least 10 days (up to 30 days for a stronger flavor).
3. Make the Syrup:
- In a saucepan, heat water and sugar over medium heat until fully dissolved.
- Let the syrup cool to room temperature.
4. Combine & Strain:
- Strain the infused vodka through a fine mesh sieve, discarding the lemon peels.
- Mix the infused vodka with the cooled syrup.
5. Bottle & Store:
- Pour the limoncello into glass bottles and seal tightly.
- Refrigerate for at least 5 days before serving for the best flavor.
6. Serve & Enjoy:
- Serve chilled in small glasses, or use in cocktails, desserts, and marinades.
Notes
- For a stronger citrus flavor, let the infusion sit for up to 30 days before adding the syrup.
- Store in the freezer for an ultra-chilled and smooth sip.
- Use Meyer lemons for a sweeter, less tart variation.
