For the Coconut Base:

  • 2 cups unsweetened shredded coconut
  • 1/4 cup coconut oil, melted
  • 3 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • Pinch of sea salt

For the Chocolate Coating:

  • 1 cup dark chocolate chips (70% or higher)
  • 1 tbsp coconut oil

For Topping:

  • 12 whole almonds

Instructions

  • Prepare the coconut base – In a mixing bowl, combine shredded coconut, melted coconut oil, maple syrup (or honey), vanilla extract, and sea salt. Stir until well combined.
  • Shape and freeze – Press the mixture firmly into silicone mini muffin molds or shape into small rectangles by hand.
  • Add almonds – Place one whole almond on top of each coconut piece, then freeze for 20 minutes until firm.
  • Melt the chocolate – In a microwave or double boiler, melt dark chocolate chips and coconut oil, stirring until smooth.
  • Coat with chocolate – Dip each frozen coconut bite into the melted chocolate or spoon chocolate over the tops to fully cover them.
  • Chill and set – Refrigerate for 10-15 minutes until the chocolate hardens.
  • Enjoy! – Serve chilled and store leftovers in the refrigerator for up to one week.
