Description

Hobo Casserole is a comforting and hearty dish featuring layers of savory ground beef, tender potatoes, and gooey melted cheese. Perfect for busy weeknights, this simple and delicious casserole is a family favorite!

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1/2 cup beef broth (or water)
  • 1/4 cup milk (optional, for creaminess)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Prepare the Oven and Baking Dish
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. Cook the Ground Beef
    • Heat olive oil in a large skillet over medium heat. Add ground beef and cook, breaking it apart, until browned and fully cooked (5-7 minutes). Drain excess fat if needed.
  3. Sauté Onions and Garlic
    • Add chopped onion and minced garlic to the skillet. Cook for 3-4 minutes until the onion is soft and translucent.
  4. Assemble the Casserole
    • Spread the cooked ground beef mixture evenly in the bottom of the prepared baking dish.
    • Layer the thinly sliced potatoes on top of the beef. Season the potatoes with salt, pepper, Italian seasoning, and paprika.
  5. Add Cheese and Broth
    • Sprinkle shredded cheddar cheese and grated Parmesan cheese evenly over the potatoes.
    • Pour the beef broth (or water) around the edges of the dish to keep the potatoes moist. For extra creaminess, drizzle with milk if desired.
  6. Bake the Casserole
    • Cover the dish with aluminum foil and bake for 30 minutes.
    • Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is melted and golden.
  7. Serve and Garnish
    • Remove from the oven and garnish with fresh parsley if desired. Serve hot and enjoy!
