Description

This Herb Roasted Split Turkey Breast is an easy and flavorful turkey recipe featuring garlic, fresh herbs, and a golden crispy skin. Perfect for Thanksgiving, Sunday dinners, or small gatherings, it’s a juicy, no-brine roast that delivers maximum flavor with minimal effort.


Ingredients

  • 1 split turkey breast (bone-in, skin-on, about 3-4 lbs)

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tbsp fresh rosemary, finely chopped

  • 1 tbsp fresh thyme leaves

  • 1 tbsp fresh parsley, chopped

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp salt

  • 1/2 tsp black pepper

 

  • Optional: lemon wedges and fresh herbs for garnish


Instructions

  • Preheat oven to 375°F (190°C). Pat the turkey breast dry with paper towels for crispier skin.

  • In a bowl, combine olive oil, minced garlic, rosemary, thyme, parsley, onion powder, paprika, salt, and pepper.

  • Rub the herb mixture all over the turkey, making sure to get under the skin for maximum flavor.

  • Place turkey breast on a rack in a roasting pan, skin-side up.

  • Roast uncovered for 1 to 1.5 hours, or until a meat thermometer reads 165°F (74°C) at the thickest part.

 

  • Remove from oven and rest for 10 minutes before slicing. Garnish with fresh herbs and lemon wedges, if desired.

  • Use a meat thermometer to avoid overcooking.

  • For a citrusy twist, add lemon zest to the herb rub.
