  • 1/2 cup almond flour (for extra softness)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix together peanut butter, coconut sugar, egg (or flax egg), and vanilla extract.
  • Stir in baking soda, salt, and almond flour until well combined.
  • Scoop dough into small balls, place them on the baking sheet, and flatten with a fork to create a crisscross pattern.
  • Bake for 10-12 minutes until edges are slightly golden.
