Instructions
Prepare the Salmon:
- Preheat the Broiler:
- Preheat your oven’s broiler to high and line a baking sheet with foil.
- Make the Honey Harissa Glaze:
- In a small bowl, mix the harissa paste, honey, 1/4 tsp kosher salt, and 1 tbsp olive oil.
- Coat the Salmon:
- Place the salmon filets on the prepared baking sheet. Brush the honey harissa mixture evenly over the filets.
- Broil the Salmon:
- Broil the salmon for 6–8 minutes, or until cooked through and caramelized on top. (The internal temperature should reach 145°F or 63°C.)
Prepare the Cabbage Slaw:
- Mix the Slaw Ingredients:
- In a large bowl, combine the shredded cabbage, scallions, mixed herbs, lemon juice, 1/2 tsp kosher salt, and cumin. Toss well to combine.
Assemble the Bowls:
- Layer the Ingredients:
- Divide the cooked quinoa between two bowls. Top each with a portion of the cabbage slaw and a salmon filet.
- Optional Additions:
