Description

  • 2 whole eggs
  • 1 egg yolk
  • 5 oz whole milk
  • 5 oz heavy cream
  • 2 tbsp butter (melted)

For the Filling:

  • 8 oz ham (thinly sliced)
  • 8 oz Swiss cheese (shredded or sliced)
  • 1 tbsp Dijon mustard
  • 1 tbsp mayonnaise

Instructions

. Make the Crepe Batter:

  1. In a medium bowl, whisk together the cake flour, sugar, and salt.
  2. In another bowl, whisk the eggs, egg yolk, milk, and heavy cream until combined. Gradually add the wet mixture to the dry ingredients, whisking until smooth.
  3. Stir in the melted butter. Cover the batter and let it rest for 15-20 minutes.

2. Cook the Crepes:

  1. Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with butter.
  2. Pour about 1/4 cup of batter into the pan, swirling to spread it evenly into a thin layer. Cook for 1-2 minutes, or until the edges lift slightly and the bottom is golden.
  3. Flip the crepe and cook for another 30 seconds. Repeat with the remaining batter, stacking the crepes on a plate.

3. Assemble the Filling:

  1. In a small bowl, mix Dijon mustard and mayonnaise. Spread a thin layer of the mixture over one side of each crepe.
  2. Add a few slices of ham and a layer of Swiss cheese to the crepe’s center.

4. Warm and Serve:

  1. Fold the crepes into quarters or roll them up. Place them in a warm skillet over low heat, covered, for 2-3 minutes to melt the cheese.
  2. Serve warm and enjoy!
