For the Chimichurri Sauce:
- 1/2 cup fresh parsley (chopped)
- 1/4 cup fresh cilantro (chopped)

- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons red wine vinegar
- 1/3 cup olive oil

Marinate the Lamb:
- In a bowl, mix olive oil, garlic, salt, black pepper, oregano, smoked paprika, and lemon juice.
- Coat the lamb chops in the marinade and let sit for at least 30 minutes.

- Grill the lamb chops for about 3-4 minutes per side for medium-rare, or longer for desired doneness.
- Remove from the grill and let rest for 5 minutes.
