Ingredients

Scale

For the Lamb Chops:

  • 8 lamb loin chops
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 tablespoon lemon juice

For the Chimichurri Sauce:

  • 1/2 cup fresh parsley (chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 2 cloves garlic (minced)
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons red wine vinegar
  • 1/3 cup olive oil

Instructions

  1. Marinate the Lamb:

    • In a bowl, mix olive oil, garlic, salt, black pepper, oregano, smoked paprika, and lemon juice.
    • Coat the lamb chops in the marinade and let sit for at least 30 minutes.
  2. Grill the Lamb:

    • Preheat the grill to medium-high heat.
    • Grill the lamb chops for about 3-4 minutes per side for medium-rare, or longer for desired doneness.
    • Remove from the grill and let rest for 5 minutes.
  3. Prepare the Chimichurri Sauce:

    • In a bowl, mix parsley, cilantro, garlic, red pepper flakes, oregano, salt, black pepper, red wine vinegar, and olive oil.
    • Stir well and let sit for 10 minutes to allow flavors to blend.
  4. Serve:

    • Arrange the grilled lamb chops on a platter.
    • Serve with the chimichurri sauce on the side or drizzled over the lamb.
    • Enjoy!

Notes

  • For an extra kick, add a splash of lemon juice to the chimichurri before serving.
  • Lamb pairs well with grilled vegetables, roasted potatoes, or couscous.
  • Letting the meat rest after grilling keeps it juicy and flavorful.
