Description

These grilled herb-marinated chicken drumsticks are juicy, flavorful, and perfect for healthy low-carb meals. Marinated in olive oil, lemon, garlic, and herbs, they deliver bold taste with lean protein. Ingredients

  • 8 chicken drumsticks (skin on or off)

  • 2 tbsp extra virgin olive oil

  • Juice of 1 lemon

  • 3 garlic cloves, minced

  • 1 tbsp fresh rosemary, chopped

  • 1 tsp dried oregano

  • 1/2 tsp smoked paprika

 

  • Salt and black pepper, to taste


Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, rosemary, oregano, smoked paprika, salt, and pepper.

  2. Add chicken drumsticks and toss to coat evenly. Cover and marinate in the refrigerator for at least 1 hour (overnight for deeper flavor).

  3. Preheat grill or grill pan to medium-high heat.

  4. Grill drumsticks for 20–25 minutes, turning occasionally, until the internal temperature reaches 165°F (74°C) and the skin is golden and slightly charred.

  5. Let rest for 5 minutes before serving. Garnish with extra lemon or herbs if desired.

Notes

  • You can bake these at 400°F (200°C) for 35–40 minutes if grilling isn’t an option.

  • Great for meal prep—store leftovers in the fridge for up to 3 days.

  • Pairs well with grilled veggies, cauliflower rice, or a simple salad.

  • Use boneless chicken thighs or breasts if preferred.
