For the Crispy Shallots:

  • 2 large shallots, thinly sliced
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt

Instructions

  1. Prepare the dip: In a bowl, mix Greek yogurt, lemon juice, lemon zest, minced garlic, chopped chives, salt, and black pepper. Stir until smooth. Refrigerate for at least 15 minutes to enhance flavors.
  2. Crisp the shallots: Heat olive oil in a pan over medium-low heat. Add thinly sliced shallots and cook until golden and crispy, about 5-7 minutes. Stir in red pepper flakes, smoked paprika, and salt. Remove from heat.
  3. Assemble and serve: Spread the yogurt dip onto a serving plate. Drizzle the crispy shallots and spiced oil over the top. Garnish with extra chives.
