For the Crispy Shallots:
- 2 large shallots, thinly sliced
- 1/4 cup olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon smoked paprika

Instructions
- Prepare the dip: In a bowl, mix Greek yogurt, lemon juice, lemon zest, minced garlic, chopped chives, salt, and black pepper. Stir until smooth. Refrigerate for at least 15 minutes to enhance flavors.
- Crisp the shallots: Heat olive oil in a pan over medium-low heat. Add thinly sliced shallots and cook until golden and crispy, about 5-7 minutes. Stir in red pepper flakes, smoked paprika, and salt. Remove from heat.
- Assemble and serve: Spread the yogurt dip onto a serving plate. Drizzle the crispy shallots and spiced oil over the top. Garnish with extra chives.
