Description

These Greek Chicken Kabobs are tender, juicy, and packed with Mediterranean flavors! Marinated in a blend of Greek yogurt, olive oil, lemon, and spices, then grilled to perfection, they’re perfect for any occasion. Serve with tzatziki sauce, pita bread, and a fresh salad for a complete Greek-inspired meal.

For the Kabobs:

2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces

1/2 cup plain Greek yogurt

4 cloves garlic, minced

1/4 cup olive oil

1 tsp lemon zest

3 tbsp fresh lemon juice

2 tbsp red wine vinegar

1 1/2 tsp dried oregano

1/2 tsp paprika

1 1/2 tsp kosher salt

1/2 tsp black pepper

For Garnish:

Crumbled feta cheese

Fresh parsley, chopped

Optional Sides:

Tzatziki sauce (for dipping)

Pita bread

Greek salad


Instructions

1. Prepare the Chicken and Marinade:

Place the chicken pieces in a large resealable bag, bowl, or shallow dish.

In a medium bowl, whisk together the Greek yogurt, garlic, olive oil, lemon zest, lemon juice, red wine vinegar, oregano, paprika, salt, and black pepper until smooth.

2. Marinate the Chicken:

Pour the marinade over the chicken, ensuring all pieces are coated.

Seal the bag or cover the dish, and refrigerate for at least 30 minutes or up to 4 hours.

3. Prepare the Skewers:

If using wooden skewers, soak them in water for 20 minutes to prevent burning.

Thread the marinated chicken onto skewers, about 4 ounces per skewer. Discard any remaining marinade.

4. Grill the Kabobs:

Preheat the grill or grill pan to medium-high heat. Brush with olive oil to prevent sticking.

Place the skewers on the grill and cook for about 10 minutes, turning every 2–3 minutes until the chicken is fully cooked (internal temperature of 165°F/74°C).

5. Serve and Garnish:

Remove the kabobs from the grill and place them on a serving platter.

Garnish with crumbled feta cheese and chopped parsley.

Serve warm with tzatziki sauce, pita bread, and a simple Greek salad.

 


Notes

Make Ahead: Marinate the chicken the night before for maximum flavor.

Cooking Alternatives: If you don’t have a grill, bake the kabobs at 400°F (200°C) for 18–20 minutes, flipping halfway through.

Vegetable Additions: Add bell peppers, onions, or zucchini to the skewers for variety.
