Description

Grandma’s “Vegetable” Soup is a hearty and comforting dish that combines ground beef with a medley of vegetables, making it a satisfying meal for any occasion.

Ingredients

Units Scale
  • 1 lb ground beef
  • 23 potatoes, cut into evenly sized pieces
  • 1 large can (28 oz) tomato sauce
  • 1 large can (28 oz) stewed tomatoes
  • 1 regular-sized can green beans
  • 1 regular-sized can peas and carrots
  • 1/2 onion, chopped
  • Seasonings of your choice (don’t be afraid to season generously!)

Instructions

  • Brown the Beef: In a large pot over medium heat, cook the ground beef and chopped onions until the beef is browned and the onions are translucent. Drain excess fat if necessary.
  • Add Vegetables and Liquids: Add the potatoes, tomato sauce, stewed tomatoes, green beans, peas, and carrots to the pot. Stir to combine.
  • Season: Add your choice of seasonings to the pot. Common choices include salt, pepper, garlic powder, and Italian seasoning.
  • Cook: Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 40 to 50 minutes, or until the potatoes are tender.
  • Serve: Taste and adjust seasonings as needed. Serve hot, accompanied by crusty bread or crackers if desired.

Notes

  • Feel free to customize the vegetables based on your preferences or what you have on hand.
  • This soup can be stored in the refrigerator for up to 3 days and reheats well.
