Description

These Garlic Parmesan Chicken Meatloaves are juicy, flavorful, and packed with savory garlic, rich Parmesan, and Italian herbs. For the Meatloaf:

  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 1/2 cup Italian breadcrumbs (or gluten-free alternative)
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1/4 cup milk or cream (to keep moist)
  • 1 teaspoon dried oregano (or basil for added flavor)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Topping:

  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil or melted butter
  • 1 teaspoon garlic powder (for extra garlic flavor!)

Instructions

1. Prepare the Meatloaf Mixture:

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking sheet or muffin tin.
  2. In a large bowl, mix together ground chicken, garlic, breadcrumbs, Parmesan, egg, milk, dried oregano, salt, and pepper until well combined.

2. Shape & Bake:

  1. Divide the mixture into 4–6 mini meatloaves and shape them into oval patties. (Alternatively, use a muffin tin for easy portioning.)
  2. Place them on the prepared baking sheet.

3. Add the Topping:

  1. In a small bowl, mix Parmesan cheese, olive oil (or butter), and garlic powder.
  2. Sprinkle or brush the topping evenly over the meatloaves.

4. Bake & Serve:

  1. Bake for 22–25 minutes, or until the internal temperature reaches 165°F (74°C).
  2. Let rest for 5 minutes before serving.

5. Garnish & Enjoy:

  1. Serve warm, garnished with fresh parsley and paired with roasted veggies, mashed potatoes, or a fresh salad.

Notes

  • For a gluten-free version, use gluten-free breadcrumbs or crushed pork rinds.
  • For extra moisture, mix in ½ cup finely grated zucchini.
