- 3–4 lb beef roast (sirloin or ribeye)
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 2 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1 cup beef broth (optional, for basting)
- Preheat oven to 375°F (190°C).
- In a bowl, mix garlic, olive oil, mustard, rosemary, thyme, salt, pepper, and smoked paprika into a paste.
- Rub the mixture evenly over the beef roast and place it in a roasting pan.
- Roast for 45-60 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
- Baste with beef broth halfway through for extra moisture.
- Remove from the oven and let rest for 10-15 minutes before slicing. Serve warm.
