1/4 cup ghee or butter, divided

1 tablespoon olive oil

1 lb Yukon gold potatoes, diced into 1/2-inch cubes

3 garlic cloves, minced

1 teaspoon dried thyme

1/2 teaspoon dried oregano

1/2 teaspoon sea salt, plus more to taste

1/4 teaspoon ground black pepper, plus more to taste

1 1/4 lb sirloin steak, cut into 1/2-inch cubes

Fresh chopped parsley, for garnish
Instructions

Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons ghee.

Once hot, add diced potatoes and season with garlic, thyme, oregano, salt, and pepper.

Cook undisturbed for 2–3 minutes, then stir. Continue cooking 8–10 minutes, stirring occasionally, until potatoes are crispy and fork-tender. Remove and set aside.

Increase heat to medium-high. Add remaining ghee, then steak cubes in a single layer. Season with salt and pepper.

Sear steak without stirring for 2 minutes, then stir and cook another 1–2 minutes until golden brown.

Return potatoes to the skillet. Stir to combine and cook for another minute.

Garnish with chopped parsley and serve hot.
