- 1 lb beef sirloin or ribeye, cut into 1-inch cubes
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup pearl onions, peeled
- 1/2 cup cherry tomatoes
- 1 tbsp fresh parsley or microgreens (for garnish)
Instructions
- Prepare the Beef: Pat beef cubes dry with a paper towel and season with salt, black pepper, smoked paprika, and dried thyme.
- Sear the Beef: Heat olive oil in a cast-iron skillet over medium-high heat. Sear beef cubes for 2-3 minutes per side until browned. Remove from skillet and set aside.
- Roast the Vegetables: In the same skillet, melt butter and add minced garlic, pearl onions, and cherry tomatoes. Sauté for 3-4 minutes until fragrant.
- Combine & Finish: Return beef to the skillet and toss in the garlic butter sauce. Cook for 1-2 minutes, coating evenly.
- Serve: Garnish with fresh parsley or microgreens and serve hot with roasted potatoes or crusty bread.
Notes
- If you prefer a bit more heat, add extra red pepper flakes or a dash of hot sauce.
- You can substitute pearl onions with regular onions, but pearl onions offer a sweeter flavor.
- This dish pairs wonderfully with mashed potatoes, rice, or a side salad.
