- 12 large button mushrooms (or baby portobello)
- 1/2 cup all-purpose flour
- 2 eggs (or flax eggs for vegan option)
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan (optional)
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for drizzling)

Preheat & Prepare the Baking Sheet:
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper.

Prepare the Mushrooms:
- Clean mushrooms with a damp paper towel and trim the stems.

Set Up the Breading Station:
- Place flour in one bowl.
- Beat eggs in another bowl.
- In the third bowl, mix panko, Parmesan (if using), garlic powder, paprika, salt, and black pepper.

Coat the Mushrooms:
- Dredge each mushroom in flour, then dip in beaten egg, and finally coat in the breadcrumb mixture.
- Place the mushrooms on the prepared baking sheet.

Bake Until Crispy:
- Lightly drizzle olive oil over the mushrooms.
- Bake for 20-25 minutes, flipping halfway, until crispy and golden brown.

- Serve warm with a dipping sauce of choice, like garlic aioli, ranch, or spicy sriracha mayo.
