Ingredients

Units Scale

For the Crust:

  • 1 1/2 cups all-purpose flour (or gluten-free flour blend)
  • 1/2 cup unsalted butter, cold and cubed
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 45 tablespoons ice water

For the Filling:

  • 2 cups fresh blackberries (or frozen, thawed and drained)
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest (or orange zest for variation)
  • 1 teaspoon vanilla extract

For the Topping:

  • 1 egg yolk, beaten (for crust)
  • 1 tablespoon blackberry syrup (or honey/jam, optional)
  • Confectioners’ sugar, for dusting
  • Fresh blackberries, for garnish

Instructions

Step 1: Make the Dough

  1. In a bowl, mix flour, sugar, and salt.
  2. Cut in the cold butter with a pastry cutter or hands until the mixture resembles coarse crumbs.
  3. Add ice water, 1 tablespoon at a time, until dough holds together.
  4. Shape into a disk, wrap in plastic, and chill for 30-45 minutes.

Step 2: Prepare the Filling

  1. In a bowl, toss blackberries with sugar, cornstarch, lemon zest, and vanilla.
  2. Let sit for 10 minutes to allow flavors to meld.

Step 3: Assemble the Galette

  1. Preheat oven to 375°F (190°C).
  2. Roll out the chilled dough into a 12-inch circle on a floured surface.
  3. Transfer to a parchment-lined baking sheet.
  4. Spoon the blackberry filling into the center, leaving a 2-inch border.
  5. Fold the edges over the filling, pleating as needed.

Step 4: Bake the Galette

  1. Brush crust with beaten egg yolk for a golden finish.
  2. Bake for 30-35 minutes, until crust is golden brown and filling is bubbling.

Step 5: Cool & Serve

  1. Let cool for 10 minutes, then dust with confectioners’ sugar.
  2. Garnish with fresh blackberries and serve warm or at room temperature.

Notes

  • Keep the Butter Cold – For a flaky crust, use chilled butter and avoid overmixing the dough.
  • Prevent a Soggy Bottom – Sprinkle a little almond flour or breadcrumbs on the dough before adding the filling to absorb excess moisture.
  • Sweetness Adjustment – If your blackberries are tart, add an extra tablespoon of sugar to balance the flavors.
