Instructions
Step 1: Make the Dough
- In a bowl, mix flour, sugar, and salt.
- Cut in the cold butter with a pastry cutter or hands until the mixture resembles coarse crumbs.
- Add ice water, 1 tablespoon at a time, until dough holds together.
- Shape into a disk, wrap in plastic, and chill for 30-45 minutes.
Step 2: Prepare the Filling
- In a bowl, toss blackberries with sugar, cornstarch, lemon zest, and vanilla.
- Let sit for 10 minutes to allow flavors to meld.
Step 3: Assemble the Galette
- Preheat oven to 375°F (190°C).
- Roll out the chilled dough into a 12-inch circle on a floured surface.
- Transfer to a parchment-lined baking sheet.
- Spoon the blackberry filling into the center, leaving a 2-inch border.
- Fold the edges over the filling, pleating as needed.
