Instructions
Prepare the Fried Onions:
- Heat 4 cups of vegetable oil in a large skillet or deep pan to 350°F (175°C).
- Thinly slice the large onions into rings. Coat them lightly with flour, shaking off excess.
- Fry the onion rings in batches until golden and crispy, about 2-3 minutes per batch. Drain on paper towels and set aside.
Prepare the Cheesy Sauce:
- Preheat the oven to 375°F (190°C).
- In a large skillet, melt the butter over medium heat. Add the finely chopped small onion and minced garlic, cooking until fragrant.
- Stir in the flour, cooking for 1-2 minutes. Gradually whisk in the chicken broth and milk, cooking until thickened.
- Add the cheddar cheese, stirring until melted. Mix in the sour cream, dried mustard, cayenne pepper, salt, and black pepper.
Assemble and Bake:
- In a large bowl, combine the frozen hash browns with the cheese sauce. Mix until evenly coated.
- Transfer the mixture to a greased 9×13-inch baking dish. Spread evenly.
- Bake uncovered for 45 minutes until bubbly and golden brown.
Top and Serve:
- Remove the dish from the oven and top with the crispy fried onions. Bake for an additional 5-10 minutes.
