Description

Oils & Vinegars:

  • 4 cups vegetable oil (for frying)

Dairy:

  • 1/2 cup unsalted butter
  • 2 cups sharp cheddar cheese, shredded
  • 1 1/2 cups sour cream
  • 1/2 cup whole milk

Instructions

Prepare the Fried Onions:

  1. Heat 4 cups of vegetable oil in a large skillet or deep pan to 350°F (175°C).
  2. Thinly slice the large onions into rings. Coat them lightly with flour, shaking off excess.
  3. Fry the onion rings in batches until golden and crispy, about 2-3 minutes per batch. Drain on paper towels and set aside.

Prepare the Cheesy Sauce:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the finely chopped small onion and minced garlic, cooking until fragrant.
  3. Stir in the flour, cooking for 1-2 minutes. Gradually whisk in the chicken broth and milk, cooking until thickened.
  4. Add the cheddar cheese, stirring until melted. Mix in the sour cream, dried mustard, cayenne pepper, salt, and black pepper.

Assemble and Bake:

  1. In a large bowl, combine the frozen hash browns with the cheese sauce. Mix until evenly coated.
  2. Transfer the mixture to a greased 9×13-inch baking dish. Spread evenly.
  3. Bake uncovered for 45 minutes until bubbly and golden brown.

Top and Serve:

  1. Remove the dish from the oven and top with the crispy fried onions. Bake for an additional 5-10 minutes.
