Instructions
1. Prepare the Dough:
- In a medium saucepan, combine water, butter, salt, and granulated sugar. Bring to a boil over medium heat.
- Remove the pan from heat and stir in the flour all at once. Mix vigorously until the dough forms a ball and pulls away from the sides of the pan.
- Transfer the dough to a mixing bowl. Using a hand mixer or stand mixer, beat in eggs one at a time. Continue mixing until the dough is smooth and glossy.
2. Heat the Oil:
- In a deep skillet or fryer, heat vegetable oil to 375°F (190°C). Use a thermometer for accuracy.
3. Fry the Beignets:
- Drop spoonfuls of dough into the hot oil, frying in batches to avoid overcrowding.
- Cook for 2–3 minutes per side, or until the beignets are golden brown and puffed up.
- Remove from the oil and drain on paper towels.
4. Dust and Serve:
- While still warm, generously dust the beignets with powdered sugar.
- Serve immediately with coffee or as a dessert.
