  • 1/2 cup unsalted butter
  • 1/4 tsp salt
  • 1 tbsp granulated sugar
  • 1 cup all-purpose flour
  • 4 large eggs

Instructions

1. Prepare the Dough:

  1. In a medium saucepan, combine water, butter, salt, and granulated sugar. Bring to a boil over medium heat.
  2. Remove the pan from heat and stir in the flour all at once. Mix vigorously until the dough forms a ball and pulls away from the sides of the pan.
  3. Transfer the dough to a mixing bowl. Using a hand mixer or stand mixer, beat in eggs one at a time. Continue mixing until the dough is smooth and glossy.

2. Heat the Oil:

  1. In a deep skillet or fryer, heat vegetable oil to 375°F (190°C). Use a thermometer for accuracy.

3. Fry the Beignets:

  1. Drop spoonfuls of dough into the hot oil, frying in batches to avoid overcrowding.
  2. Cook for 2–3 minutes per side, or until the beignets are golden brown and puffed up.
  3. Remove from the oil and drain on paper towels.

4. Dust and Serve:

  1. While still warm, generously dust the beignets with powdered sugar.
  2. Serve immediately with coffee or as a dessert.

Notes
