Description

This Greek Lemon Rice is a zesty, aromatic Mediterranean side dish that pairs perfectly with grilled meats, seafood, or fresh salads. Made with fresh lemon juice, garlic, oregano, and fluffy long-grain rice, this easy 25-minute recipe brings a burst of sunshine to your plate!


Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken or vegetable broth
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2 tbsp)
  • Salt & black pepper, to taste
  • Fresh parsley, for garnish

Instructions

1. Sauté the Aromatics

  1. In a medium saucepan, heat olive oil over medium heat.
  2. Add chopped onion and sauté for 3-4 minutes, until soft.
  3. Stir in garlic and oregano, cooking for 30 seconds until fragrant.

2. Cook the Rice

  1. Add long-grain rice and stir to coat in the oil and aromatics.
  2. Pour in broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

3. Finish with Lemon & Herbs

  1. Remove from heat and let the rice sit, covered, for 5 minutes.
  2. Fluff with a fork and stir in lemon zest, lemon juice, salt, and black pepper.
  3. Garnish with fresh parsley and serve warm!

Notes

  • For extra depth, toast the rice for 1-2 minutes before adding broth.
  • Make it richer by adding a pat of butter before serving.
