Ingredients
For the Fish:

For the Ratatouille:

1 small eggplant, diced

1 zucchini, diced

1 red bell pepper, diced

1 tomato, diced

1/2 red onion, chopped

2 garlic cloves, minced

2 tbsp olive oil

1 tsp dried thyme

Salt and pepper, to taste

Fresh basil or parsley, for garnish
Instructions

In a large skillet, heat olive oil over medium heat. Sauté garlic and onions until soft.

Add eggplant, zucchini, and red bell pepper. Cook for 5–7 minutes, stirring occasionally.

Stir in tomato, thyme, salt, and pepper. Simmer uncovered for 10–12 minutes until vegetables are soft and mixture thickens.

Meanwhile, season fish fillets with salt, pepper, and a drizzle of olive oil.

In another skillet over medium-high heat, cook fish for 3–4 minutes per side until just opaque and flaky.
