- 1 can cream cheese frosting (store-bought) OR

- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
1. Make the Batter:
- In a large mixing bowl, combine the beaten eggs, pumpkin puree, sugar, and oil. Mix until smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and cinnamon. Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
2. Bake the Bars:
- Spread the batter evenly onto an ungreased 15x10x1-inch baking pan.
- Bake in a preheated oven at 350°F (175°C) for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
3. Prepare the Frosting:
- If using homemade frosting: Beat the cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
4. Frost the Bars:
- Allow the baked pumpkin bars to cool completely before spreading the cream cheese frosting evenly over the top.
5. Slice and Serve:
- Cut into squares or rectangles and serve. Store any leftovers in the refrigerator for up to 5 days.
