Ingredients

Units Scale

For the Pumpkin Bars:

  • 4 large eggs, beaten
  • 16 oz pumpkin puree (not pumpkin pie filling)
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon

For the Frosting:

  • 1 can cream cheese frosting (store-bought) OR
  • Homemade Frosting Option:
    • 8 oz cream cheese, softened
    • 1/2 cup unsalted butter, softened
    • 2 cups powdered sugar
    • 1 tsp vanilla extract

Instructions

1. Make the Batter:

  • In a large mixing bowl, combine the beaten eggs, pumpkin puree, sugar, and oil. Mix until smooth.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and cinnamon. Gradually add the dry ingredients to the wet mixture, stirring until fully combined.

2. Bake the Bars:

  • Spread the batter evenly onto an ungreased 15x10x1-inch baking pan.
  • Bake in a preheated oven at 350°F (175°C) for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

3. Prepare the Frosting:

  • If using homemade frosting: Beat the cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla, beating until creamy.

4. Frost the Bars:

  • Allow the baked pumpkin bars to cool completely before spreading the cream cheese frosting evenly over the top.

5. Slice and Serve:

  • Cut into squares or rectangles and serve. Store any leftovers in the refrigerator for up to 5 days.

Notes

  • Storage: Store frosted bars in an airtight container in the refrigerator.
  • Spice Boost: Add nutmeg or cloves for an extra warm, spiced flavor.
  • Serving Tip: These bars pair perfectly with a cup of hot apple cider or coffee.
