For the Burritos:

  • 6 burrito-sized flour tortillas
  • 3 cups rotisserie chicken, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped

For the Green Chile Sauce:

  • 1 (14 oz) can green enchilada sauce
  • 1 (4 oz) can mild green chiles, diced
  • 1 cup low-sodium chicken broth
  • 2 tbsp vegetable oil
  • 3 tbsp flour
  • 3/4 tsp salt
  • 1 tsp ground cumin
  • Black pepper, to taste
  • 2 cups cheese (cheddar or a Mexican blend)

Optional Toppings:

  • Cilantro, chopped
  • Avocado, sliced

Instructions

1. Make the Green Chile Sauce:

  1. Heat vegetable oil in a saucepan over medium heat.
  2. Stir in flour, whisking continuously for 1 minute to create a roux.
  3. Gradually add chicken broth, whisking until smooth.
  4. Stir in green enchilada sauce, green chiles, cumin, salt, and black pepper.
  5. Simmer for 5-7 minutes until slightly thickened. Remove from heat.

2. Assemble the Burritos:

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine shredded chicken, sour cream, green onions, and Monterey Jack cheese.
  3. Divide the filling evenly among the flour tortillas and roll them into burritos.

3. Bake & Smother:

  1. Place burritos seam-side down in a greased 9×13-inch baking dish.
  2. Pour green chile sauce over the burritos, then sprinkle 2 cups of cheese on top.
  3. Cover with foil and bake for 20 minutes.
  4. Remove foil and bake 5-10 minutes longer until the cheese is bubbly and golden.

4. Serve & Enjoy!

  1. Garnish with cilantro, avocado, and extra sour cream. Serve warm!
