Ingredients
For the Burritos:
- 6 burrito-sized flour tortillas
- 3 cups rotisserie chicken, shredded
- 1 cup Monterey Jack cheese, shredded
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
For the Green Chile Sauce:
- 1 (14 oz) can green enchilada sauce
- 1 (4 oz) can mild green chiles, diced
- 1 cup low-sodium chicken broth
- 2 tbsp vegetable oil
- 3 tbsp flour
- 3/4 tsp salt
- 1 tsp ground cumin
- Black pepper, to taste
- 2 cups cheese (cheddar or a Mexican blend)

Instructions
1. Make the Green Chile Sauce:
- Heat vegetable oil in a saucepan over medium heat.
- Stir in flour, whisking continuously for 1 minute to create a roux.
- Gradually add chicken broth, whisking until smooth.
- Stir in green enchilada sauce, green chiles, cumin, salt, and black pepper.
- Simmer for 5-7 minutes until slightly thickened. Remove from heat.
2. Assemble the Burritos:
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine shredded chicken, sour cream, green onions, and Monterey Jack cheese.
- Divide the filling evenly among the flour tortillas and roll them into burritos.
3. Bake & Smother:
- Place burritos seam-side down in a greased 9×13-inch baking dish.
- Pour green chile sauce over the burritos, then sprinkle 2 cups of cheese on top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake 5-10 minutes longer until the cheese is bubbly and golden.
